Globe, in partnership with Facebook Online Community Fine Dining Club Philippines, proudly introduces the “Gourmet Giving Series: A Fine Dining Thanksgiving Experience for the Hapag Movement.”
What an inspired endeavor among Metro Manila’s premier restaurants! Each one pledged a portion of their proceeds to support supplementary feeding and livelihood training initiatives for Filipino families experiencing involuntary hunger.
Gourmet as a means of giving back
A brilliant idea! Chefs and restaurants bring in their passion & connections for a worthy cause while patrons enjoy a gastronomic sojourn at the same time supporting The Hapag Movement fundraiser events.

ember
Last night, the husband and I enjoyed a beautiful 6 course dinner hosted by Ember (by Chef Josh Boutwood) at Greenbelt.
The housemade sourdough bread with smoked butter on the side was the opening salvo. The bread was freshly baked, crunchy on the outside and soft & fluffy on the inside. Smoked butter was almost white and quite creamy to spread. So happy that it was salted hehe.
Next in quick succession ,
Local Burrata on a bed of black and green olive purée, with fresh basil and sourdough bread crumbs. Finished with basil oil, tomato oil and sea salt. Perfect as appetizer. Loved it with sourdough!

Mushroom
White button mushroom, shiitake & chestnut mushrooms sautéed in butter and garlic, drizzled with chive oil , garlic emulsion & purple radish. Then generously topped with grated Comte cheese. You can enjoy it as is or with the house made sourdough. So good!
Octopus
Grilled pulpo with harissa & lemon wedge. Harrissa purée is hot chili pepper paste made of roasted red peppers and other hot chili peppers . The result is surprisingly not spicy at all but flavorful

Salmon
Grilled salmon with watercress on the side then topped with salmon sauce. Salmon sauce incorporated heavy cream, tarragon , dill , tobiko, spring onion and dill oil

Short Rib
Sous vide for 8 hours then finished on the grill over white onion purée & chive oil. Melt-in-your-mouth texture. Scrumptious! Would have been perfect with rice!
Dessert

Kladdkaka
Chef Josh Boutwood pays tribute to his beloved grandmother with her Kladdkaka recipe.
Kladdkaka is a popular Swedish dessert similar to a molten chocolate cake. Think crisp exterior matched with soft gooey interior
The name derives from the Swedish word “kladdig”, meaning “sticky” or “messy”.
Tres Leches
Sponge cake soaked in three kinds of milk – evaporated, condensed and whole milk
Overall a memorable night filled with amazing food, wine & cocktails & delightful conversation.
